| As ancient as human civilization, wine and wine service is wrought with tradition. This is perhaps most evident in the variety of glassware used to serve wine. Although enjoyable in any glass, wine is often served in glasses with tall stems and egg-shaped bowls. Some connoisseurs believe that glasses of this general shape, called stemware, enhance many of wine’s favorable characteristics. For example, wine served in stemware is easily swirled without spilling, and this action releases some of the volatile compounds that make up its bouquet, or aroma. The egg-shaped bowl concentrates the volatile compounds at the mouth of the glass, so that both the aroma and the flavor can be appreciated. |
