The soda-fountain drink egg cream is probably so called for its white froth, which resembles an egg white. This popular and inexpensive drink is associated with New York City residents, like the even more economical (and now dated) two cents plain (seltzer) and chocolate phosphate (seltzer and syrup). Of these, only the chocolate phosphate has much currency in other American cities.
