muscle protein: an iron-containing protein resembling hemoglobin, found in muscle cells, that takes oxygen from the blood, releasing it to the muscles during strenuous exercise. The three-dimensional structure of myoglobin and the alpha and beta chains of hemoglobin are almost identical.
