Definition:
 
1. relating to gaps: forming, situated in, or relating to one or more small openings, gaps, or cracks

2. geology occurring between other minerals: located in the pores or between the crystals of a rock

3. chemistry of compound containing metals and nonmetals: relating to a compound, e.g. a carbide, in which ions or atoms of a nonmetal occupy positions in a metal lattice. Interstitial compounds generally have metallic characteristics.

4. physiology occurring between tissues: lying between parts of an organ or between groups of cells or tissues. The interstitial cells between mammalian testicles are responsible for secreting male sex hormones.
